Whip these up when you don't have too much time,
but still want to make something delicious.

Prep time: half hour to marinate
10 minutes to throw together
Servings: 6
Marinade for beef or chicken
1/4 c. olive oil
1/4 c. white wine vinegar
3 cloves garlic, minced
1/2 tsp. salt
1/2 tsp. oregano
1/8 tsp. pepper
Score meat and marinate in Ziploc bag or shallow pan at least 1/2 hour.
Stir-fry over medium high heat with sliced onions, green pepper, and red pepper.
Warm tortillas in microwave or oven. (I like cooking the uncooked tortillas from Costco.)
Spoon meat mixture onto warm tortillas. Top with salsa, tomatoes, cheese, sour cream, or guacamole.
