steamboat springs

with my in-laws home from their mission, we've had a lot of catching up to do...
a whole lot has changed in 3 years, that's for sure.

for our family trip this year we all decided to head to a place in colorado called

S P R I N G S 


this place is a hidden gem

it's a good mix between Jackson and Park City, i'd say.
and there's nothing better than a week in the mountains.

i would've been fine to stay forever.

i took a break from my camera while we were swimming, so i don't have pictures.
but this place is right off of main street- it has natural hot springs, a rock-climbing wall into a pool, water slides, lanes for lap swimming, and a big pool for the kids. super fun!

we did so many fun trails, i can't pick out a favorite. 
basically you can bike anywhere there and have fun. 
this was probably my favorite thing about steamboat.


H O T  A I R  B A L L O O N S

riding a hot air balloon is on our bucket list, but we decided to sit back and watch this time around. the hot air balloon festival happened to be the weekend we were there, and at least 30 balloons flew up in the clouds. i sat back in awe while shoving a warm maple donut down my throat. perfection. if you ever go there and want to splurge a little, they do hot air balloon rides every week and the sight would be worth it.

this was my very favorite hike we did. 
long, (especially with the littles)...
but so worth the view from the top of the gondola.

independence day


I N D E P E N D E N C E 
D A Y
Bike ride, patriotic waffles, swimming, Midway cabin parade and Olympic games, sleepover in Midway, and watching fireworks from the top of a hill... that made for a good independence day. So grateful to all the sacrifice that went before me to make this freedom possible

banana cookies

hi.
if there's one recipe people beg me for, it's this one. 
...my all time favorite.



so, i decided it was time to reveal the

B A N A N A  C O O K I E  

recipe.




BANANA COOKIES

1 cube butter, soft
½ cup shortening
1 c. sugar
2 eggs
1 c. mashed bananas (2 whole bananas)
½ c. buttermilk
1 tsp. vanilla
3 c. flour
1 ½ tsp. soda
½ tsp. salt


Cream butter, shortening, sugar and eggs.  Add bananas, buttermilk, and vanilla.  Add dry ingredients.  Chill 1 hour.  Drop by spoonfuls on lightly greased cookie sheet. 

 (**These are some of the only cookies I know of, where you won't want to devour the cookie dough. The dough itself isn't worth trying, but put them in the oven and watch them work their magic.)  

Bake 10 minutes at 350 degrees.



 Now for the best part... 


BROWN BUTTER FROSTING

Heat 1 square real butter over low heat until brown. **This is the most important part! Don't let the butter burn, but watch closely and remove off heat once it's ready. Add 2 cups powdered sugar and ½ tsp. vanilla.  Stir in 2-4 Tbsp. hot water.  Beat until spreadable.
